Ingredients
3 tablespoons of vegetable oil
1 clove of garlic
2 middle onions finely chopped
4 pieces of chicken
2 tea spoons of yellow pepper powder
1 tomato finely chopped
1/2 onion finely sliced
salt
pepper
Prepare augado.
In frying pan, heat the vegetable oil over medium heat.
Add garlic, then onion. Sauté until translucent. Add yellow pepper and stir for 3minutes. Add one cup of water; Cover the pan and continue to cook over a low heat, stirring occasionally, for 10 minutes.
Prepare chicken by taking off born if they still have, put salt and pepper. Sauté both side of chicken with oil and add them to augado, Cover the pan and continue to cook for 10 minutes over a medium heat stirring occasionally.
Serve chicken with augado and add potato,rice( optional ) and tunta if you can get,
Tunta is dehydrated potato which prepare Andean people.
If you have a dry and cold climate in you country you can try this. Freeze potatoes during three nights outside in winter. Leave frozen potatoes in a river during one month. Take out potatoes from the river and step on them for the purpose of taking off peal and water inside. Dry them well on the ground.
Now you can keep them as long as you want.
